Vegan Banana Bread
Banana bread is a great way to make use of your overripe bananas. It is easy to make yet so delicious! It's suitable for vegans too.
You can just pop this in your microwave before eating and voila! Perfect for breakfast or tea.
- 200 gr self-raising flour
- 2 tsp baking powder
- 2 tsp cinnamon powder
- 100 gr demerara sugar
- 3 pcs bananas (large)
- 75 gr coconut oil
Preheat oven to 180 deg Celsius.
Put sliced banana, sugar, and coconut oil in a bowl. Use a hand blender to mix everything together. Make sure there are no banana chunks left.
Sieve the flour, baking powder and cinnamon powder. Fold them into the wet ingredients and mix well. The final batter is stiff and doughy.
Put the batter in a tin loaf that has been lined with parchment paper and bake at 180deg Celsius for 20 minutes (uncovered) and continue to bake for another 20 minutes (covered with aluminum foil).
Take it out from the oven and cool it on the rack before slicing.
